Niseko 478-15, Niseko, Abuta District, Hokkaido
"""Niseko Distillery was established in 2019 by YK Spirits, the makers of the renowned sake 'Yakima-san.' Located in Niseko, Hokkaido, the distillery benefits from a unique climate with heavy snowfall and pristine water. They aim to create whisky with an elegant, well-balanced, and delicate flavor, harnessing the gifts of this bountiful nature.
The distillery building incorporates local Ezo matsu (Larch) extensively, providing a warm and welcoming atmosphere. They use the high-quality underground water from Mount Annupuri, the main peak of the Niseko volcano range, for the fermentation process, and distillation occurs in wooden fermenting tanks, which contribute to a deep and rich flavor profile. The aging process takes place in warehouses that naturally maintain the temperatures of Niseko's environment.
Their 'ohoro GIN (Standard),' named after the Ainu word for 'continuation,' received the prestigious Classic Gin category award for Japan at the 2023 World Gin Awards, a global gin competition held annually in the UK.
The distillery offers guided tours in both Japanese and English. They have been recognized with the Tourism Award at the Tokyo Whisky & Spirits Competition (TWSC) 2023.
In their shop and bar, you can enjoy not only gin and cocktails but also non-alcoholic cocktails using 'amasake' (sweet sake). They offer products that highlight Japanese traditional techniques and craftsmanship, embodying the idea that, like whisky, they become more valuable with time."
